In the heart of the Pays d'Auge, on the cider route, in a picture-postcard village with half-timbered houses where he has recently become the chief magistrate, Jérôme Bansard has been holding a table since 1990 under the rustic beams of the old halls.
The oldest star of Calvados is him, but when he comes to take your order in the dining room, you will see that the man has retained the impulsive look and modesty of an apprentice. And yet, how big is this table where parade the ambassadors of Normandy gastronomy : grilled John Dory, veal sweetbreads pan-fried in butter, Poularde in a luté casserole, Carteret lobster, Saint-Vaast oysters, etc.
He plays his piano still upright, chef Bansard, faithful to a cuisine punctuated by the seasons, where the product, carefully chosen, sets the tone. A score played with finesse and authenticity, far from ephemeral fashion effects, and as close as possible to the terroir.
